Mango Turkey Tacos

This lunch really felt fancy! So if you are in the mood to treat yo' self give this recipe a try!


Mango Turkey Tacos
Ground turkey (or any lean meat of your choice)
chopped mangos
chopped tomatoes 
chopped avocados
sprinkle of cheese (optional)
Add it all to you Romain or green leaf lettuce shells
And top with your choice of taco sauce or salsa and enjoy!

Cabbage is good!


There are so many reasons to add more cabbage to you diet! Like other green vegetables, it is good source of many essential vitamins such as riboflavin, pantothenic acid, and thiamin. 
It is also a very natural source of electrolytes and minerals like calcium, potassium, phosphorous, manganese, iron and magnesium, which can help control heart rate and blood pressure. Iron is required for red blood cell formation and is an important mineral for expecting mothers as it helps in avoiding anemia.

Here are two easy ways to add cabbage to your meals!

Roast it! Slice it and lay the slices flat on a baking sheet. Drizzle with olive oil and sprinkle with minced garlic and salt and pepper!

So easy and so good!



 I also really like my cabbage sauteed with pretty much anything! This was an easy lunch just sauteed cabbage and chicken seasoned with salt and pepper and garlic!


And an simple clean coleslaw recipe always hits the spot!
You just need-
Cabbage
carrots (optional)
Apple Cider vinegar
olive oil
drizzle of real maple syrup
salt 
pepper
and garlic powder

I just make this in small batches and I just add those ingredients to taste! And then toss it up! And enjoy!

Quick and Cheap Broccoli Beef

Here is a quick go to meal, perfect for those 

busy nights, that the whole family will enjoy!



Quick and Cheap Broccoli Beef

1lb lean ground beef or turkey
1 package of frozen broccoli florets (or you can use the equivalent in fresh)
2 cups rice uncooked or make cauliflower rice for you paleos
1/2 cup soy sauce, braggs aminos,or coconut aminos
1 1/2 cups water- divided
2 T cornstarch or arrow root powder
2 t sugar or 1 T real maple syrup
garlic powder
ginger powder

First up- Defrost 1lb of hamburger (obviously, if yours isn't frozen omit this step)


 Cook 2 cups of rice according to package directions

 While you are waiting for the hamburger and rice get out all your ingredients (not pictured is 1-1/12 cups water, and 2 t sugar).

Then start browning the 'burger

When it's cooked add the soy sauce and 1 cup water.

 Mix the corn starch into the remaining 1/2 c water and throw that in too, then you can sprinkle in the garlic, ginger and sugar to taste.

 Toss in the broccoli ... 

Cover and simmer until broccoli is cooked and your sauce has thickened. This usually takes less than 10 minutes.

 And voila! Dinner is ready! 

 The time was 6:12 pm when I started defrosting the hamburger and it was 6:50pm when I took the last picture. That's a pretty quick and easy dinner!
 And it looks yummy too!

It gets a thumbs up from this kid who eats his broccoli like candy first!

Strawberry Chicken Summer Salad

I love salad! It makes me happy! But I don't like it when I don't have the right dressing or the dressing I want has tons of fancy ingredients I don't have on hand!

If you eat clean on a regular basis all these ingredients are mostly like already staples in your fridge or pantry!

Strawberry and Chicken Salad 

1 cup Romaine lettuce and/or baby spinach
1 cup sliced strawberries
3/4 cup chicken 

Drizzle with
1 T balsamic vinegar
1-2 t olive oil
1 t real maple syrup

Sprinkle with
Fresh cracked pepper
Himalaya salt

Toss and enjoy! Serves one very hungry person! 

P.S. please excuse the paper plate! I am a real mom who doesn't like doing dishes!

Chicken Pad Thai

It's simple. I love anything that is simple, easy, and inexpensive. Ever since clean eating and paleo came into my life I have been on a mission to simplify and cheapify the way I eat!

Chicken Pad Thai

Ingredients
Veggies and Chicken-
1 medium to large head of cabbage (don't worry, it is good the next day too!)
3-4 uncooked chicken breasts diced 
4 cloves of garlic chopped

Seasoning and sauces-
2 t olive oil
2 T sesame oil
1/4 cup rice vinegar
2 T soy sauce, soy aminos, or coconut aminos
2 T peanut butter
2 T real maple syrup
1 t fish sauce (or more to taste)
a tiny bit of Siriacha hot sauce

Garnish (optional)-
chopped peanuts
cilantro
green onions
hot sauce

Directions
Clean cabbage and slice thinly. Chop garlic cloves. Heat a large frying pan to med-high and add 2 t olive oil. Add diced chicken, season with salt and pepper and stir fry until almost done. Then add chopped garlic. Give it two minutes to heat up with the chicken then add the cabbage and sesame oil and asian rice vinegar. Stir it all together, and when the cabbage starts getting soft add the rest of the seasoning and sauces. Continue to stir and cook until the cabbage is nice and soft and the sauce reduces a bit. This might take 10 min or until it is done to your liking!

This would safely feed 4 adults as a main dish. Our family of 7 eats every last bite! 


ps. I know that peanuts are not paleo, but it's worth it for this, I promise!
